恰巴塔、歐坦得……這些奇怪的麵包名字都是什麼意思

前不久，某零售平臺推出的十幾元一片的“歐坦得酵醒系列”切片歐包引發爭議。部分消費者因其價格昂貴而口感並無特別之處提出質疑。也有不少網友對這款歐包名字裡的“歐坦得”產生了好奇。

見到這些名字，根本想象不到這個麵包到底是什麼樣子。它們到底是什麼意思？

這些奇怪的麵包名字，大多都是外語的音譯。它們在原本的語言中大都表示麵包發明者、造型或突出的工藝。

比如“凱撒麵包”（Kaiser roll）的名字，有一種觀點認為它源自發明此麵包的師傅——這位師傅就叫Kayser。

“恰巴塔”的名字則跟形狀有關。根據《牛津食品與營養辭典》，“恰巴塔”（Ciabatta）在義大利語中是拖鞋的意思。這種麵包通常呈長方形或橢圓形，表面扁平，內部蓬鬆多孔，切開後的橫截面類似拖鞋的寬大鞋底，故而得名。

Meanwhile, "Ciabatta", as defined by A Dictionary of Food and Nutrition, means "slipper" in Italian. The bread's flat, elongated shape and porous interior resemble a slipper's sole, hence the name.

前面提到的“咕咕霍夫”，源自德語“Kugelhopf”。但這個詞需要拆開看，“Kugel”的意思是“球形的、圓形的”，對應麵包圓形、中空的造型；“Hopf”則指一種啤酒酵母，與發酵工藝有關。

還有一種說法是源於阿爾薩斯方言 gugel（風帽/頭巾）+ hupf（跳躍/膨發），比喻麵包隆起如戴帽的造型。綜合來看，它的名字和其外觀形狀密切相關。

咕咕霍夫

法國經典的布里歐麵包的名字則跟工藝有關。“布里歐”也被譯為“布里歐修”，是法語“Brioche”的音譯。“Brioche”被認為來源於兩個古老的單詞——“bris”（打破）和“hocher”（攪拌），二者組合在一起就構成了“Brioche”，突出了製作流程中的揉麵步驟。
